Hi,
is there an easy way to create 2 menu items, one for easy profile registration and one for the simple registration (only email and password) using the Extended Registration and Login plugin at the same time?

probably yes, but this is not something regards Easy Profile but template module positions. Normally all templates allow you to put a module before the content.

In your case you seems to use a template from ThemeExperts, see how to add module position before content at https://www.themexpert.com/docs/joomla-templates/primer#LayoutSetting

Hi,
it not works for 2 reasons:
1) you can't remove email field because it is required to Joomla
2) the usertype2 field is not available in registration form

For example, now I have set field to available in registration page and these following conditions
if equal to custom value "student" then hide all field in "About me" tab (Inverse: Yes)

Now you can check following links:

https://meyer-tech.com/zh/simple-reg?usertype2=student (you will see "About me" tab)

To add a content you can use a field of type HTML Delimiter (docs about it at http://docs.easy-profile.com/index.php/article/html-delimiter-field-type).

This field type is also compatible with Joomla content plugins, so for example to add module you can use in description a code like
{loadposition moduleposition}
or a code like
{loadmodule modulename}
These strings will abe replaced by a module thanks to the Joomla built-in plugin called "Load Module", docs about it at https://docs.joomla.org/How_do_you_put_a_module_inside_an_article%3F
