On the dropdown I'd like to change the text "Profile Information" text as soon below:

I tried to find this in joomla's language override function but it's not there. Can you direct me? Thanks!

Social Network plugin has its own framework, so to add/change languages see this doc: https://www.easy-profile.com/docs/92-make-your-language.html

You will find translation for your language into /plugins/jsn/socialnetwork/app/Locale/your tag language/LC_MESSAGES/default.po
