Hi,
yes, for each field you can choose parameter called "Visibility for", this parameter allow you to choose who have right to see these informations, see screenshot of the tip.

Alternatives based on your needs
- you can enable privacy for each field, so the user will choose if I field will be visible or not
- you can avoid to access to all profiles, the parameter is called "Visibility Profiles" in Components->Easy Profile->Options

All these thing are available in the free version, so you are able to try it

you can choose how to display to identify your user from Components->Easy Profile->Options->Core Fields->Display Format Name parameter, as default it is set to "Format Name", so it will display Joomla Name (Firstname + Lastname).

You can choose also "Custom" to set to show some other custom in the title and lists (or for example to remove firstname)
