Yes, because the column titles are translatable
the NAME string is a language constant, this constant is present on our translation.

Example.
You have a site in Italian and English, You can choose the title of column for gender field.
- Insert GENDER or TRANSLATE_GENDER in menu item column title
- Go in Extensions->Language Manager->Override and add the translation of constant GENDER (OR TRANSLATE_GENDER) for each language:
(italian) GENDER->Sesso
(english) GENDER->Gender

Easy Profile is translated in English,German and Italian, so NAME constant is already translated for these languages.
Same for some core title fields (Name,Lastname,Second Name,...), try to edit the label of Last Name Field.
