I'm not an area technician and I'm having a hard time setting up.

I would like a "new field" to be viewed by the user, but cannot be edited by him, only by the editor / administrator

Hi,
you can simply set the field not available in Edit Profile form, so the user will be not able to change it. Admins can still edit it from backend.

Hi,
yes, you can enable Easy Profile option (Components->Easy Profile->Options) called "Admins can show not editable fields in frontend", see screenshot
