Hi,

If I updatethe Easy Profile plugin, will I loose the changes I made in php files?
(for example titles, language changes, etc)

Hi,
yes.

You can override template files with Joomla template override feature, with this you can keep your files. unfortunately this is possible only for layout files (component and modules). Docs about this at https://docs.joomla.org/J3.x:How_to_use_the_Template_Manager#Creating_Overrides
