how do i change this line of code

to only display first name not first name and last name.

You can set the format of name from Easy Profile Configuration.
Go to administrator->Components->Easy Profile and click on Option button.

Will be automatically disabled the lastname field. The core fields are mandatory, you can manage these from configuration.
