Hi,
Easy Profile extends Joomla user management (not replace), so required fields are necessary for Joomla.

Some Tip
- You can disable avatar from Easy Profile Options
- You can disable lastname from Easy Profile Options by choosing parameter "Name Style" to "Only Name"

email, firstname (useful to compose Joomla name) and other system fields are required by Joomla and you can't disable.

besides can you explain me how create gmap fields?
This is a feature of Pro package, you have Free version, in the free version is available only Text field type

is there any problem if i list all registered users on a menu item, besides to list only users filtered by some element of user profile in other menu item, and other menu item with list using another filter? for example i have a list of students that i need to list in a menu "students", besides i have another menu where i need to list only students of first year, other menu item listing students of 2nd year, etc

about download id: you will find your download ID in profile page, this is not required but it is usefull to upgrade component from Joomla updater (in your case you need to put download ID of your client)

I have cleared Joomla cache and now seems to works.

One thing, your template does not have a good way to display DD,DL,DT html tags so in profile page the fields's layout have some problem.

I recommend you to add this CSS code in your template style to fix this problem:

Easy Profile have a simple DB structure, only 2 tables:
#__jsn_fields: here are stored fields informations
#__jsn_users: here are stored extended user information, id is the same id of Joomla user table (#__users)

Information about menu items are stored by Joomla into a system table called #__menu, here are stored all user menu parameters. Keep in mind that #__menu is managed with Joomla Nested Table System, so attention to touch these information, you can lost all your menu structures.
