I'm trying to build a site where after users register the are then able to subscribe to one ore more of the available profiles I have created (apples and oranges for example). When they pay/subscribe they then are able to fill out their apples or oranges profile details. I was thinking Easyprofile and Emerald combined might be able to do that?

this is possible with all membership components (also with Emerald).

With the subscription component you can add user to a usergroup after he buy a plan.

With Easy Profile you can set for each field a parameter called "Available for", this parameter allow you to set which fielsd are available for a specific Access Level*. You can test it also in Free version ;)

* of course you need to create Access Levels for oranges and apples usergroups from Users->Access Levels
